Mountain products – improving livelihoods at high altitudes

Abstract

The Andean root arracacha is a nutritious and potentially very versatile tuber. Yet, it is also endangered because it has been substantially under-used, especially in Peru where its biodiversity is greatest. As part of a broader programme aimed at enhancing the quality of life of Andean rural families, a project to promote the cultivation and consumption of arracacha was implemented from 1999 to 2002 among local mountain communities in Peru, Bolivia and Ecuador. The lead agency was the International Potato Center (CIP). The objective was to develop the cultivation of this plant, explore storage issues and culinary applications, and in general to support the development of the product locally, and enhance competitivity of the product regionally.

In Sucse in the Sócota district of Peru the same project offered assistance to communities engaged in the processing of arracacha into a sweet known as rallado. The small family enterprises that produce rallado were helped to improve processing techniques by combining local technologies with scientific expertise. Important innovations were introduced in terms of the planting and propagation of arracacha. Importantly, processing techniques were also improved in order to meet sanitary quality standards. The enterprises were also supported in the development of markets, skills and organization.

The project has successfully raised the profile of this Andean root and promoted and enhanced its biodiversity. As a result, the producers of arracacha have been able to increase the sale price and also the amount of fresh produce that they market. Profit margins have also increased for the sale of rallado, helping to create new jobs and improving the income – and as a result the morale – of the 160 families in the community of Sucse. New markets have also been explored and developed.

The project also aimed to stimulate new recipes and ways of preparing arracacha in order to boost local consumption. This has inspired the creation of other initiatives involving arracacha products, such as the opening of a local bakery and restaurant.
